The usual variables for custom bars are rise, width, and rearward sweep. I usually measure rise and width in inches and I measure sweep in degrees. Other options include oversized clamp tubes for some MTB stems or very wide clamp areas for Some triple-clamp suspension forks that use two small stems instead of one large stem. Bars can also be designed to have maximum grip/lever room if that is what you need. Bars can be made so that they are flat when upright in the stem or they can also have upwards sweep so that the ends are higher than the middle.
